Dulse, a seaweed rich in trace elements: copper, gold, and silverMore than ten years ago, Aurélie Viard would never have imagined that a marine ingredient would transform her way of cooking and living. One day, Éric, her husband, an agronomist and passionate explorer of living foods, had her taste a tartare made from fresh seaweed harvested in Brittany.
It was simple. And yet, it was a revelation. A new taste, an ocean of freshness and nutrients, and above all, a new way of seeing plant-based cuisine.
Aurélie, already a creative chef, then dove headfirst into the world of seaweed and subsequently wrote several books such as "Cooking with Seaweed"and"My Raw Weeks"at Marie Claire editions. Together, they explored, tested, and created dozens of recipes that have won over the tables of their friends, their children, and even starred chefs."
